Jamaican Curried Chicken |
Ingredients
1 whole Chicken
1 Onion
2 Green onion/escallion
2 Garlic
1 spring thyme
½-1 Scotch bonnet pepper
2 Potatoes
2 tsp salt
2 tsp ground pepper
2 tsp curry powder
2 tbsp cooking oil
2 tsp allspice
Instructions:
- Wash chicken with lime or vinegar and cut chicken into 1½ pieces.
- Marinate chicken for 30 minute with salt, black pepper, curry powder, allspice, onion, garlic, green onion, thyme and scotch bonnet pepper.
- Add oil to pan and brown (fry) chicken until curry powder is cooked.
- Add water and potatoes cut in cubes to pan and set stove to medium heat. Allow the chicken to cook for roughly 30 minutes or until the chicken in tender.
- Serve hot with rice, roti or any other side dish.
