Honey Balsamic Chicken

Ingredients:
1 whole chicken, halved
½ lb red baby potatoes, halved
½ cup balsamic vinegar
½ cup olive oil
14 cup honey
1 tbsp sugar
2 tsp. salt
2 tsp pepper
1 tsp. all purpose season
1 tsp. paprika
1 tsp. oregano
1 tsp. rosemary
3 clove garlic

Instructions:
  1. Wash and season chicken with 1 teaspoon of salt, 1 teaspoon of pepper, paprika, oregano and set aside.
  2. I'm a bowl, add balsamic vinegar, olive, honey and mix well. Add rosemary and garlic, then set aside.
  3. Add chicken to balsamic vinegar mixture and marinate for at least an hour.
  4. wash and season baby potato with remaining salt and pepper, drizzle 1 teaspoon of olive oil and mix well.
  5. Set oven to 350 degrees F and spray baking dish.
  6. Add chicken, baby potatoes, rosemary and garlic cloves to pan. Bake for 2 hours.
  7. Serve warm

Banana Porridge

Ingredients:
 3 green (unripe) bananas
1 cup milk
1¼ cup water
1 tsp vanilla
1 tsp. cinnamon
1 tsp. nutmeg
¼ tsp allspice
¼ salt (optional)
Condensed milk to sweeten

Instruction 
  1. Wash, peel, and slice bananas in halves.
  2. Place milk and banana in a blender and puree.
  3. Add water and liquidized formula to pan, bring to a boil,  reduce the heat and stir occasionally. If the consistency of the porridge is too thick, slowly add water to get the consistency you desire. 
  4. Add vanilla, nutmeg, cinnamon, and salt and stir well. 
  5.  sweeten with condensed milk, and simmer for 5 minutes.
  6. Serve hot.

Oven Fried BBQ Wings

Oven Fried BBQ Chicken Wings
Ingredients:

1lb split chicken wings
1 tsp. salt
1 tsp. black pepper
1 tsp. garlic powder
1 tsp. paprika
1tsp. all purpose seasoning
2 cups flour
1 cup BBQ Sauce
                                             Instructions:
1.      Combine all dried seasoning and set aside.
2.      Wash and season chicken with half of the dried seasoning mixture, then marinate for 30 minutes to an hour.
3.      In a bowl or paper bag, add flour and season with the remaining seasoning.
4.      Preheat oven to 350 degrees. Spray baking sheet and set aside.
5.      Add chicken wings one piece at a time to flour and coat well.
6.      Place chicken on baking sheet and Bake for 20 minutes on each side.
7.      Once completed, coat each chicken in barbeque sauce and bake for another 10 minutes.
8.      Remove and serve warm.

Oven Fried Spicy Chicken Wings

Ingredients: 

20-25 split wings

Brine:
1 Cup buttermilk
1Cup hot sauce
1 Tsp. salt

Seasoning: 
1Tsp salt
1 Tsp black pepper
1 Tsp hot cayenne pepper
1 Tsp. paprika
1 Tsp. onion powder
1 Tsp garlic powder
2 Cup flour

Instructions:

  1. Wash chicken wings
  2. Place chicken in a bowl or brining bag, add salt, buttermilk, hot sauce, mix and place in the refrigerator for at least an hour.
  3. In a separate container combine salt, black pepper, cayenne pepper, paprika, onion powder, and garlic powder.
  4. Pour off brine and season chicken with half of the seasoning mixture.
  5. In a bowl, add flour and the remaining seasoning mixture and mix well.
  6. Preheat oven to 400 degrees F.
  7. Coat each wing in the flour mixture and place on a oven griddle pan. Place chicken wings in the oven for 20 minutes, flip the wings and place them back in the oven for an additional 20 minutes or until done. (Ensure to check the wings frequently to prevent wings from burning )
  8. Serve warm.

Slow Cooker BBQ Pork

Ingredients:

 2 lb Pork chops

3 Potatoes, cubed

1 green onion, chopped 
2 cloves garlic, whole
1 tsp thyme 
1 onion, chopped
1 tsp salt
1 tsp black pepper
1 tsp onion powder
1 tsp garlic powder 
1 tsp ginger powder
1 tbsp soya sauce 
4 tbsp brown sugar
1 tbsp honey 
1/2 cup ketchup

1/4 cup apple cider vinegar 
Instructions: 
  • Wash and season pork chops with salt, black pepper, onion powder, garlic powder, ginger powder, brown sugar and soya sauce. Set aside.
  • Add honey, ketchup and apple cider vinegar in a cup or bowl, mix well and set aside. 
  • Wash and cut potatoes in cubes. Set aside 
  • Place potatoes, pork chops, onion, thyme and garlic in the slow cooker, then pour honey, ketchup and apple cider mix over top. 
  • Cook on high for 4 hours.
  • Garnish with green onions and serve warm.

Pan Seared Steak

Ingredients:
Top Sirloin Steak
½ salt
½ black pepper
½ oregano
2 tbsp. butter
3 tbsp. oil
2 cloves garlic
1 spring thyme 

                                Instructions:
  1. Add 1 tablespoon of oil and distribute evenly on each side of the steak and season with salt, black pepper, and oregano.
  2. Add remaining oil to ovenproof skillet and heat until it is very hot but not smoking. 
  3. Preheat oven to 420 degrees F.
  4. Add steak to the skillet and brown on each side for 5-7 minutes. (Ensure to brown the edges as well)
  5.  Add butter, garlic and thyme to the pan.
  6. Transfer skillet to oven and broil for an additional 7-10 minutes or until medium to well done.
  7. Rest steak for 5 minutes then serve.

Parmesan Roasted Baby Red Potatoes

Ingredients:
2 lb baby potatoes
½ tsp. salt
½ tsp. ground pepper
½ tsp. oregano 
½ paprika
¼ cup shredded parmesan
2 tbsp. oil

Instruction:
  1. Thoroughly wash potatoes and cut each potato in half.
  2. Preheat oven to 400 degrees F.
  3. In a bowl, add potatoes and drizzle oil on top. Mix in salt, ground pepper, oregano, paprika and shredded parmesan.
  4. Place potatoes on a baking sheet and bake for 30-40 minutes.
  5. Serve.

Cheesy Bacon Ranch Chicken Pasta

Ingredients:
Boneless chicken thighs, cubed
4-6 slices of bacon, diced
½ cup shredded Cheddar and mozzarella Cheese
1 cup alfredo sauce 
2 cups pasta, rotini
1 tbsp. oil

                    



                                                    Instructions:

  1. Wash, cut and season chicken with ranch season mix, then set aside.
  2. Add pan to stove and cook bacon until crisp.
  3. Heat oil in a medium pan and cook chicken until brown. 
  4. Cook pasta according to the package, drain and set aside.
  5. Once chicken is cooked, add alfredo sauce and cook for an additional five minutes.
  6. Preheat oven to 375 degrees F and spray baking dish.
  7. Add pasta to the chicken and alfredo sauce and stir well.
  8. Place chicken and alfredo mix in baking dish. Add diced bacon and cheese on top and place in the oven for 10 minutes.
  9. Serve warm.

Homemade Ranch Seasoning

Ingredients:
1 tsp. dried dill weed
1 tsp. dried chives
1 tsp. dried parsley
1 tsp. garlic powder
1 tsp. onion powder.
1 tsp. black pepper
1 tsp. salt
½ cup dried buttermilk

                                       Instructions:
1. Add all ingredients in a food processor and pulse for 2 minutes.
2. Store or use right away.

Jamaican Brown Stew Fish

Jamaican Brown Stew Fish
Ingredients:
4-6 Whole fish
1 Onion
1 Tomato
1 Green onion
1 Bell pepper
2 Tsp Thyme
½ Scotch bonnet pepper
3 Tbsp salt
1 Tsp black pepper
1 Tsp Allspice Berries
1 Tsp soy sauce or Browning
2 Tbsp margarine
2 Tbsp Ketchup
5 Cups water
Oil for frying

Instructions:
  1. Clean and wash fish with lime juice. In a bowl add salt and mix with 3 cups of water and set aside for 30 minutes to an hour.  
  2. In a pan heat oil. Add Fish and fry on both sides.
  3. Remove fish and oil from the pan and add margarine. OR  Remove  most of the oil leaving 2 tablespoon of oil in the pan.
  4. Sauté onion, tomato, green onion, bell pepper, thyme, and scotch bonnet pepper. 
  5. Add allspice, black pepper, soy sauce, ketchup, 2 cups of water and bring to a boil.
  6. Add fish to the sauce and cook until heated through or sauce thickens.
  7. Serve hot.

Spinach & Cheese Stuffed Chicken Things

Spinach & Cheese Stuffed Chicken Thighs
Ingredients

6-8 Boneless chicken thighs
1 Cup Spinach
1 1/3 Cup mozzarella cheese
2/3 Cup Parmesan cheese
2/3 Cup cream Cheese
1 Clove garlic, chopped
1 Tsp salt
1 Tsp black pepper
1 Tsp all purpose seasoning
1 Tsp olive oil
1 Cup bread crumbs
1 Egg, beaten
Tomato sauce

Instructions

  1. Wash and season chicken with salt, black pepper and all purpose seasoning.
  2. In a skillet heat olive oil. Add garlic and saute for 1 minute. Add spinach and cook for 2 minutes then set aside until cool.
  3. Add Parmesan cheese, cream cheese and  2/3 cups of mozzarella cheese to spinach and mix well.
  4. Place 1 tsp of spinach mixture inside each chicken thigh, evenly dispersing the remaining filing among the thighs as needed. 
  5. Close the thighs and secure with toothpicks.
  6. Coat each chicken in egg then transfer to the bread crumbs. Preheat oven to 375 degrees F and spray baking dish.
  7. Place each chicken thighs in baking dish and bake for 25-30 minutes.
  8. Remove chicken from the oven. Pour tomato sauce over chicken thighs and sprinkle remaining mozzarella cheese and bake until cheese melt.
  9. Serve hot.

Shrimp Scampi Pasta

Shrimp Scampi Pasta 
Ingredients:
1 lb linguine
1 lb shrimp, peeled and deveined
1 Tbps. olive oil
4 Tbsp. unsalted butter
2 Cloves garlic, chopped
¼ Cup parsley, chopped
Juice of 1 lemon
½ Tsp. lemon zest
1 Tsp. salt
½ Black pepper
Parmesan cheese 

Instructions:
  1. Cook linguine as per instructions. 
  2. In a medium pan, add olive oil. Saute Garlic for 2-3 minutes. 
  3. Season shrimp with salt and pepper, add to pan and cook until pink. 
  4. Add butter, lemon zest, lemon juice and cook for 3 minutes.
  5. Add Parsley, parmesan and linguini.
  6. Serve Hot.

Curry Goat

Ingredients:
3 lbs goat meat, cubes
1 tsp. salt
1 tsp black pepper
¼ tsp ground allspice
1 tsp meat seasoning
1 tsp onion powder
1 onion, chopped
2 garlic cloves, chopped

1 escallion, chopped
2 tsp thyme
1 scotch bonnet pepper, chopped
2 potatoes, cubes
Instructions:
  1. Washed and season goat meat with salt, black pepper, all spice, onion powder, onion, garlic, escallion, thyme and scotch bonnet pepper. Marinate for at least 2 hours.
  2. Add oil to pan, set aside onion, garlic, escallion, thyme and scotch bonnet pepper and brown goat meat.
  3. Once the meat is browned add 2 cups of water and cook until meat is tender. (Add more water if necessary)
  4. Add onion, garlic, escallion, thyme, scotch bonnet pepper and potatoes to pan and simmer until cooked.
  5. Serve hot.

Turkey Sausage Breakfast Casserole

Ingredients:
1 lb ground turkey sausage
Tater tots
6 Eggs
¼ Green bell pepper
¼ Cup red bell pepper
½ -1 Cup cheese, shredded
1 Onion
1 Green onion
¼ Tsp. salt
¼ Tsp. black pepper
¼ Cup milk
1 Tbs. oil

Instructions

  • In a pan, heat oil and cook turkey until evenly brown.  
  • Place eggs, milk, salt, pepper and beat together.
  • Preheat oven to 375 degrees F and spray baking dish. 
  • Evenly place tater tots in the bottom of the baking dish and layer with turkey, onion, bell peppers, green onion and eggs.
  • Place in the oven for 40 minutes.
  • Serve hot.

Oxtail

Jamaican Oxtail 
Ingredients
3 lbs oxtail
2 Onions, chopped
½ Cup escallion, chopped
1 Can Lima Bean 
2 Tsp. Thyme
1 ½ tsp. salt
2 Cloves garlic
1 Scotch bonnet pepper
Soya sauce or browning (optional)
Oil for browning


Instruction: 
  1. Wash and season oxtail with onion, escallion, thyme, garlic, salt and scotch bonnet pepper. Marinate for at least one hour.
  2. Heat oil in a heavy sauce pan and brown oxtail on medium heat. (Set aside vegetables)
  3. Add oxtail in a pressure cooker for 30-45 minutes or until oxtail is tender or pour off oil and add water a little at a time until meat is tender.
  4. Remove pressure cooker cover. Add vegetables and lima bean and allow meat to cook for 25 minutes or until gravy thickens.
  5. Serve with Rice
