Ingredients:
2 Salmon fillets, Sliced in half (not all the way through)
¼ cup cream cheese
¼ cup parmesan cheese
1 cup spinach
1 teaspoon blackened seasoning
1 teaspoon olive oil
1/2 teaspoon salt (optional)
Instructions:
- Slice salmon in half to create an opening to add the stuffing.
- wash salmon and season with blackened seasoning and salt, then set aside.
- Add spinach, cream cheese and parmesan cheese in a bowl and mix together well.
- Heat olive into an ovenproof skillet.
- Add spinach mixture in the opening you created for the salmon then sear for 5 minutes on each side.
- Transfer skillet to the oven and bake at 350 degrees C for 15-20 minutes.
